
Home Fries, lightened up! Also from the Christmas Brunch I made!!! Not bogged down with oil (although, some days that is just the ticket for a great breakfast!), but crispy and guilt free!!
BAKED HOME FRIES
Serves 6
6 russet potatoes, scrubbed and diced
2 TBS canola oil
1/8 tsp cayenne pepper
1/4 tsp garlic powder
1/4 tsp onion powder
2 tsp paprika
Salt and pepper to taste
1. Preheat oven to 425.
2. Scrub and dice the potatoes into very small pieces (approximately 1/2")
3. Place a greased aluminum foil on a baking sheet.
4. Place your spices, canola oil, and potatoes into a Ziploc bag. Shake to evenly season potatoes.
5. Place the potatoes flat on the greased and foiled baking sheet.
6. Bake for 15 minutes. Mix and flip the potatoes to cook for an additional 15 minutes.
I'm making these RIGHT now. Except I only have red potatoes so it may be a little crunchy. YUM. Don't know why I never thought to bake my homefries. You are my inspiration. loveyou
ReplyDeleteI love home fries. These do sound easier (and less oily - a bonus) than traditional, freeing up hands to do other breakfast tasks. Great job!
